Easy Chicken Fajitas

This recipe is quick and easy.  The chicken was already cooked, and shredded.

My family is full of picky eaters. One kid won’t eat any of the vegetables, I don’t put any in his. Another doesn’t eat cheese, etc.

Easy Chicken Fajitas
A favorite Mexican meal in our house. Fajitas can be mild or spicy. Vegetables are optional and it is easy to modify for picky eaters.

  1. Put the chicken in a large skillet and add the fajita seasoning mix, follow the directions on the packets for the amount of water required. Simmer until most of the water has evaporated, stirring occasionally.
  2. In another skillet, melt the butter or margarine. If everyone likes both peppers, cook them together. Otherwise cook them in separate pans. Cook on medium heat for 10 to 15 minutes then set aside. The tomato can be cooked with the peppers or left raw to be used as garnish. If you wish to cook the tomato, put it in during the last 5 minutes.
  3. Open the can of refried beans and put them in a large sauce pan. Cook on medium heat for 15 minutes, stirring occasionally.
  4. Tortillas can be heated in a clean towel in the microwave or individually in a skillet or on a griddle. Wrap warmed tortillas in a clean kitchen towel or in foil until ready to assemble the fajitas.
  5. When all of the ingredients are cooked, each family member can put the ingredients they like on their individual fajitas. Refried beans can go in the fajita or can be served on the side with cheese on top.
