{EASY} Side Dish Recipe – 3 Ingredients!

Need a fresh and easy side dish fast?

I don’t know what dinner looks like at your house but usually I forget to plan it and then at the last minute I’m tossing something together from meat I forgot to defrost early enough and the kids are underfoot with craft projects (which usually involves glitter, which is a GREAT craft item… NOT a great dinner ingredient!) and 87 different things seem to require my attention all at the same moment.

I’m pretty good at whipping up main dishes in this chaotic atmosphere.  And then I get it to the table to realize I forgot a side dish… Usually the vegetable! So I run to the freezer, grab a bag of peas or corn or whatever happens to be there and quickly heat it up and toss it at everyone, declaring that they must eat their veggies.  Even though they probably don’t taste great.

{Please tell me I’m not the only one who does this!}

Well, I DO sometimes remember to plan these things slightly ahead and when I do, we usually eat something delicious, like THIS gem.  It was the first thing everyone finished on their plates and everyone asked for seconds.  🙂

Quick easy Side Dish from 3 simple fresh ingredients

Okay.

So this isn’t an Earth shattering revelation.

Fresh tastes better than frozen.  Or canned.  Everyone agreed?

Also, this recipe isn’t that unique or anything. But it is FAST.  Easy.  CHEAP and ready in about 5 minutes – Though it’s best if you can make it ahead and let it rest for about half an hour.

The RECIPE:  Cucumber & Tomato Salad

You’ll need:

  • 2 cucumbers
  • 2 large ripe tomatoes
  • 2 tablespoons FRESH parsley, chopped
  • Salt and pepper to taste

  1. Peel your cucumbers, unless they are from your garden with those divinely thin and tasty skins!  Roughly chop them up.
  2.  Chop up your tomatoes and dump them in a pretty bowl with your cucumbers.
  3. Salt and pepper to taste (don’t be shy with the salt.  Salt and tomatoes were made for each other!)
  4. Chop up your fresh parsley and dump that in the pretty bowl too.
  5. Mix with your hands, cover and let rest for 30 minutes if possible.
  6. You can make this up to 2 hours ahead if you want.

Serves 6 hungry people as a side dish.  Or one hungry momma as lunch!

Optional:  If your family likes it, a drizzle of about a tablespoon of balsamic vinegar with the same amount of olive oil would be DIVINE in this.  And, if you have access to it, small chunks of fresh mozzarella would add that special something to make this worth bringing to a party!
